It’s back and it’s ready for your enjoyment by July 4, 2015! Stone Brewing Company’s Enjoy By IPA – a devastatingly fresh double IPA. While freshness is a key component of many beers – especially big, citrusy, floral IPAs – Stone Brewing has taken it further, a lot further, in this IPA. If you don’t already know, they’ve specifically brewed it NOT to last.

The Stone team took the opportunity with this beer to use several interesting techniques they’ve learned during their many years brewing great Double IPAs. The result is an intense, dry beer with very little malt sweetness but with plenty of malt flavor to provide a background to the “ginormous” hop character. Devastatingly fresh, devastatingly delicious, devastatingly desirable, devastatingly dank!

They made sure that the Enjoy By date isn’t randomly etched in tiny text somewhere on the label, to be overlooked by all but the most attentive of retailers and consumers. Instead, Stone Brewing wanted to send a clear message with the name of the beer itself. And then there’s Stone Brewing Company’s Enjoy After Brett IPA. In 2014, the innovative Stone Team had an idea that would counter the modern American craft-brewing concept of consuming IPAs fresh, and proposed developing an IPA intended for aging — one that would evolve and become a completely different beer. Enjoy After 12.26.15 Brett IPA was launched as an IPA brewed to cellar. Well, it’s back and available in Arizona!

While nearly every IPA on the planet should be drunk as fresh as possible, that is not the case with Stone Enjoy After 07.04.16 Brett IPA. Intended for aging until at least July 4, 2016, this unique IPA is spiked at bottling with Brettanomyces, a wild yeast that, over time, brings about charmingly unpredictable complexities of spice, funk, acidity and more. The operative words in our beer-cellaring thesis are “over time.” Ideally, you’ll want to cellar the beer up to-or beyond-the Enjoy After date to help it reach its full evolutionary potential. At that point, some facets of the Brett characteristics will have mellowed, while others will have become more profound; it all matures into a fascinating and delicious culmination. Individual results will vary…and that’s both the beauty and the intent behind this beer.
